Shrimp Salad with Dill and Cucumber
serves 4
Ingredients
- 1 1/2 lb shrimp, shelled, cooked, cooled, large chop
- 1/2 C mayonnaise or yogurt
- 1/2 C onion, minced
- 2 C cucumber, peeled, seeded and diced
- 2 T fresh dill, chopped
- 1 T lemon juice
Instructions
- Whisk together the mayonnaise or yogurt and lemon juice, then mix in dill and season to taste.
- Toss the shrimp, onion, and cucumber in the dressing.
- Plate and serve chilled.
